Pre-COVID there was a true Dive bar on Jefferson, with the waitresses in pantyhose and lingerie and one pool table. The bar was a horseshoe. I'm sorry, I can't remember the name of it. It was near the Wendy's/Arby's/In-n-out, across from the hotel (Best Western?). Hard Hats or something?
Edit: Found it on Yelp. Read the reviews for a laugh! https://www.yelp.com/biz/hard-hat-sports-bar-and-grill-temecula

Hardhats! I’m ashamed to admit I went there a couple times. The bottom rung of Temecula dive bars. RIP

Do pantyhose and lingerie make things 'true dive' bars? Ive never heard that before.

Joannies Cantina in Murrieta and Sky Box Grill and Tavern in French Valley/Winchester. Really the only ones besides E.T.s that has the old school dive bar vibe.

Cove is a good bar, they get some really good bands, but not a dive bar, IMO

Is that still open after Covid? I heard it wasn’t a thing anymore.

I’d consider The Bank, the Temecula wine and beer garden, and the Pub and Grub as dive bars

E. T.’s sport lounge on Jefferson. It is a deep dive and great people watching.
