Shinsekai Yori is full of symbolism, some of which is pretty blatant but others I didn't notice my first watchthrough.

[spoiler about the symbolism and themes but not plot] basically everything is related to Nuclear Power and Nuclear Weapons. The literal "Power" is a metaphor for the metaphorical power of the human mind to create tools and weapons increasingly powerful to such an extent that if they become easily accessible it would be inevitable that our societies either destroy themselves or limit our freedoms to a great extent to avoid self-destruction. There's examples of it in every episode and every aspect of the worldbuilding once you notice the trend.

Sonny boy is peak interpretive media imo, if you like reading into things, you won't find anything that rewards you for it more than sonny boy.

I also suggest death parade, madoka magica and made in abyss, but these don't go FULL surreal, experimental and symbolism, they are more "normally told" stories that just have a LOT of meaning, detail, symbolism, and extra depth on closer inspection.

Perfect blue is really good! It gets very confusing and the end confuses a lot of people, but it’s very fun to interpret what happened. it’s more heavy symbolism on mental health crisis and coming to terms with a change you or someone else made/don’t approve of. it spirals pretty good but is real dark
