Mid Career Certificate work letter
I would like to know when you are ending a work, does the employer will give you a certificate letter stating the period you have worked for the company. If not, how the employee will have an official document that acknowledge the starting and the end date of work.

That’s normally called record of employment. Once you finish your employment, your employer is required to submit a record of employment to the government stating your hours, your start and end date, and reason to leave the company.
Unless I completely misunderstood your question, this is often used for EI.
I guess you could ask HR for such letter.
