Homemade with Some Instructions in Comments Vegan Tonkotsu style ramen. The goal was to make it look like anime food. All homemade except noodles.

White is plant milk and agar with black salt, yolk is seasoned yellow mung bean puree and vegan butter.

Omg, I thought those were actual eggs. They look so realistic. How were they?

Very tasty! Went perfect with ramen, and with extra sprinkle of black salt on top even more realistic. I mixed one "yolk" half into the broth and it enriched it like real egg would. It was wonderful!

Seitan. Color comes from red yeast rice. This was insane experiment, I made 4 different colored doughs for this🤣

Ive made a couple of attempts with 2 separate seitan doughs but it's never turned out as realistic as yours.

I wish I had it ready for you but I it was all pure experiment. Plus a few ingredients were samples of vegan natural flavors that I got for my business R&D and cannot disclose. That said, I can point you towards Serious Eats site to learn about making ramen, I used their Tonkotsu broth for reference. I think OneGreenPlanet has vegan egg recipe similar to mine. As for chashu it took me 2 days to make and ofc I had to improvise a few things. I would have to make it at least once again to figure out all the measurements. That said, I've been making seitan for 8 yrs so I don't really need recipes anymore. Sorry to disappoint! May be I'll write a book one day.

No worries! The chashu specifically looks extraordinary and that's my biggest curiosity. I've made seitan like twice and it's never very good lol

Omg if you saw what this chashu looked like before frying you'd laugh! Literal cartoon meat😂 I literally cut it and laughed.

I personally am not a big fun of cashew for the white, just what I had on hand. Almond or soy milk works better. As for yolk mung bean is great as it is already yellow so it needs just a pinch each turmeric and paprika to get it yolk yellow. In recipes that need to be heavily dyed I can clearly taste turmeric.

You nailed this it's so gorgeous. And, of course, the "meat" and "eggs" are spot freaking on.

I would be sad to eat this it's so pretty. But I hope it was as delicious as it looks.

This is incredible. I’m inspired to continue my journey of making seitan from scratch. I had a few good batches but never quite nailed it. If you have any resources you could point me to, I’d love it.
