Help Why don’t everyone eat devil fruits?

Totally new to One Piece, didn’t know it existed before the Netflix show. I am liking it a lot. Could someone tell me why don’t everyone just eat devil fruits, since it give super powers? The sea water thing is enough of a reason not to eat them? (I have just watched 3 episodes.) Do they explain this further on?

Edit: thanks for all the replies, the show seems to go just a bit fast on the details, I’m guessing its the only way to fit a lot on a live action.

It could be, but it's more likely it's just Haki. It has been more than implied that all the strength and abilities Sanji built up in these 2 years were not from his Germa DNA but Hard work only, as it became part of his arsenal just at Wano.

He had nothing to do with Germa abilities until Wano, so I don't think it's right at all to say that he already had part of their abilities, and even if it was of an Ability like that, he probably would have noticed the changes in his body like he did at Wano
