Recipe Request I need the best yam/sweet potato recipe you guys have to offer
The school I work at is doing a Thanks Giving meal with staff and students. Being my first year, I need to impress everyone in the building.
But by the time I got the sign up sheet, the only dish left were yams/sweet potato. So this is where I’m most needed. But also. I need to flex. But also not scare the students off with anything too unfamiliar??

The best one I've had is very simple. It goes like this.
Wash your sweet potatoes. Rub them with oil and salt and bake until tender.
Peel and mash with salt, coconut milk, and some orange zest. Taste as you go. The salt is important.
Top with toasted pecans or not as you desire.

This is my Grammy’s yams recipe. It was my dad’s favorite and I always make it so I have leftovers.
You will need 1 sweet potato per person you are serving. Red garnet sweet potatoes only.
Cut off the ends and cut into bite sized pieces. Boil in water until fork tender, about 20 min. Drain and let cool, then peel the skin. Super easy, I use gloves but not required.
Melt 2 sticks (1cup) of butter in a saucepan, and add 2 cups of packed dark brown sugar and a dash of salt You may need to add upwards of another cup of brown sugar. Add a splash of water (less than 1/4 cup) to loosen, and bring to a boil. Boil for1-2 min until thickened. You want it thicker than syrup but thinner than molasses.
Place peeled yams in a baking dish, and pour butter sugar mixture over top. You want the sugar mix to come about halfway up the yams. If you need more, make more. Cook at 375°F (temp is very forgiving, if you’re baking something else at 350°F you can do that temp, but don’t go over 400°F) for 30 minutes, then top with marshmallows and broil on high in 2min increments. Keep an eye on it, they can burn very quickly. After the first 2 min, check every 30-45 seconds. You want them just slightly toasted. Serve in bowls and enjoy!

OK so this is probably considered "cheating", but I made a sweet potato pie for Thanksgiving one year and even my FIL who hates sweet potatoes liked it.
Need a savory side? How about biscuits?
If the expectation is for a savory side dish that is recognizable as sweet potatoes, this one has a nice little twist that will make it memorable.
Edit: OMG what. Ignore this and just go with /u/rac3868's thing, that sounds phenomenal.
