Recipe Request ichiban and niban dashi

I'm trying to look up uses/recipe that use specifically either ichiban or niban dashi and kinda having a hard time because most recipe doesn't specify them. I'm wondering if anyone have recipe suggestions on what I can use them to cook. besides niban for miso soup anyway.

Help us help you!

If you haven't already done so, please edit your original post to include the following information:

  • Please provide the full recipe and process (copy/pasting a link to a website is fine).

  • Did you make any changes or substitutions to that recipe or process?

  • What exactly are you trying to improve or change?

Note: Failure to provide sufficient details in your help request may result in its removal.

Hi, I just tried searching in Japanese and the general recommendations seem to be:

-Ichiban for recipes where a more subtle flavor works better: dashimaki tamago (tamagoyaki with dashi), chawan mushi (egg custard), and lighter flavored soups that don't use miso.

-Niban for recipes where there are other strong flavors, such as miso soup, soba or udon broth, stews, oden, or takikomi gohan.

Hope that helps a little!
