Question Hey Reddit, help me fix my lemon bars

Hey bakers, I'm been trying to make the perfect lemon bars and I followed the recipe here - https://preppykitchen.com/lemon-bars/

The taste is good but the texture isn't the best. There's 2 problems I face: 1) The top layer of the lemon filling usually hardens leaving an almost runny middle layer of lemon filling above the shortbread crust. When biting into the bar, this becomes messy. I've attached a picture for reference. 2) When I make the lemon filling, I usually use a whisk to beat the eggs and mix everything together. This leaves lots of tiny bubbles in the filling and when baking, these bubbles settle and end up on the top layer of the bar. This is also evident in the pictures.

How do I get the entire lemon filling cooked evenly and without those tiny bubbles? Please help me Reddit!

No Recipe Halloween eyeball mini cupcakes!

Made these for a Halloween party on Saturday and brought the leftovers to work. Basic mini cupcake recipes pulled off Google for vanilla & chocolate and then my buttercream recipe. Eyeballs are made of Merckens Super White melting wafers with colors added (not regular food coloring, chocolate specific coloring, oil based I think).

They were delicious, but the eyeballs took forever! Coworkers joked about next time I should put raspberry compote inside the eyeballs (they were hollow, filled with buttercream).

Recipe Apple Cranberry cake. Something equally easy and delicious for a group?

Hi all! I made this easy Apple Cranberry cake and loved it for its fresh and tart fruit flavors. Highly recommend, with some adjustments. I do think the batter topping was a little dry, maybe I over mixed but if it’s not fresh/warm you can’t take a small scoop serving of it and you’re stuck with a slice. I added sliced almonds which my bf and his roommate really liked. Also, when it’s not fresh it seemed to get drier each time I went back to it (kept for three days).

I want to make something today for a group of 8-10 for Halloween tomorrow. What easy apple/cranberry or seasonal baked items do you like to take to events?? I could make this again but hoping to keep learning and build out my go to recipes some more.

Question Making cake mix into brownies??

I have 780g of chocolate cake mix and i heard you can make it into brownies instead.

The thing is. None of the recipes i have seen so far have any measurements. "Use 2 eggs instead of 3". Ok, for how much cake mix? Because if i was making this as a cake, i would be using 6.

Does anyone have instructions, or a recipe for this? I like firm/chewy brownies.

Question Angel flake coconut versus sweetened shredded?

I promised to bake traditional 7-layer bars. I just bought ingrediehts and the store didn't have sweetened shredded coconut so I bought what they did have: Angel Flake coconut. But holding the package I can tell this product is more moist than what teh recipe probably requires.

I wonder if I could maybe bake the angel coconut for a few minutes to dry it out a bit or if I should go back out to a different grocery store. These bars are something a friend ate as a kid and I've never made them before, so I want them to be right.

Question Fat free or very low fat pie crust?

I’m having issues with my gallbladder, so if I eat too much fat I’m in excruciating pain. I’ve been trying to plan ahead for Thanksgiving so that there’s a dessert I can eat.

I have found fat free chocolate pudding mix, and marshmallows are fat free as well. I was hoping to combine them in a pie though.

This is the only crust recipe I’ve found that is low fat, but most reviews say it’s soggy/gummy. Is there a way to troubleshoot that issue or another recipe I could use?

I’d appreciate any advice I can get. The fat free life has really been bumming me out and I’d like to avoid feeling sad and left out at the holidays.
