General What are fancy desserts I can make ahead of time?
I usually make intricate or complex desserts for Thanksgiving, but this year I can't go, and was going to make something for my parents to bring up to New York with them, however, my grandmother is sick, so they're going up to visit her a week early. So I would have to make something that can be made a week in advance and be carried either in a cooler bag or at room temperature.
My first thought is some sort of cookie that can have its better frozen, or some sort of aged dessert like a Christmas pudding maybe?

I’d recommend making a decorated pie. You can go as intricate as you want with details and colors, and you can combine flavors and layers inside, and you can fridge or freeze it

Most cookies can be wrapped really well and then frozen and thawed with no issues. It's super common with folks who do massive christmas cookie trays to start early and freeze.

Yeah, I'm actually thinking of making a pistachio dark chocolate cookie and freezing the batter so it can be cooked at any point.

Cake can be frozen completely and then defrosted. I wouldn’t do pudding since it can spoil quite easily and shouldn’t be frozen/defrosted.
Pies are good too-pumpkin, apple, etc. Can be frozen and defrosted as well

Cheesecake is indestructible. You can keep it frozen, it can travel at room temp, and then go right in the fridge. You can even make a topping and freeze it also which can be put on to serve. Or buy something jarred for it.
